Fresh thyme, parsley and rosemary, plus 1T of good, stone ground dijon.
Soy sauce and EVOO in a bowl. Mix with the mustard.
Coat the tenderloin, then sprinkle on the chopped herbs
salt and pepper to taste.
Brown in a skillet (or use an iron skillet), then move to a over safe dish or baking sheet (or leave in the iron skillet).
20 minutes or so at a pre-heated 400.
Serve with roasted rosemary red potatoes!

I made a tenderloin for my daughter last evening. (She doesn't get much pork in the ME.)
I used pretty much the same ingredients but added garlic, onion powder, brown sugar, white wine vinegar, sweet paprika. Marinated for several hours and then followed the rest. She was in pig heaven. lol

Think with the brown sugar and soy would work nicely?

Don't boil it very hard though. Just enough to kill any bacteria and reduce it. I will let you know how it goes. I seem to have trouble with lean cuts of pork, tend to dry.

I usually cook this one by internal temperature. Usually to between 140 and 145, and then let it stand for a few minutes.

So last night I pulled out the cast iron skillet and went to work. Along with it, I made herbed Hassleback potatoes and roasted Brussels sprouts. The young woman was in 7th heaven.
