It's that time again.... the baking begins this week.
Chocolate chip cookies with walnuts Oatmeal cookies with chocolate chips instead of raisins Peanut butter blossoms Chocolate peanut butter no bakes Chocolate covered peanuts (adding peanut butter and pretzels this year) Honey Crisp apple pies Snicker doodles

I made choc chip & oatmeal raisin 1st weekend for local fire companies visit with Santa. Last night made the same for my wife's office party this morning. Next week she's going to a get together with friends where you bring 3 dz cookies, an ornament & a bottle of wine. She wants something different. I might try to make my favorite cookies my aunt made growing up, Michigan Rocks. Its walnuts & dates. They were always so good.

Definitely gingerbread, highly likely I'll make shortbreads. Grandson likes my toll house bars, then a chocolate yule log with a vanilla cream filling and chocolate raspberry ganache.

Lemon crinkle cookies (not very Christmasy but everyone loves them); chocolate peppermint bark; raspberry linzer cookies; no-bakes (peanut butter and chocolate).
Had the family ladies over Saturday and had a cookie making marathon. With 5 kiddos under 5! Lots of fun and nothing valuable broken!!!

I'm not the baker, I am in charge of, Chex Mix (original and in the oven), shucking oysters, and general kitchen prep like chopping veggies, getting out the serious mixer and such. Oh yeah clean up.
As far as baking that is my wife's venue. Generally she makes Polish Chrusciki – Angel Wings, Toll house cookies (with and without walnuts). Cream cheese based press cookies, maybe a babka not the fancy rolled up one just with raisins and nuts.

I used to bake Irish lace cookies but I was told that I wasn't really all that good at it and I should maybe do something else for the holidays so I became in charge of the soups.

Whose chocolate chips do you use? I have used Nestle for years but am considering Ghirardelli this year. I use Ghirardelli chips with the Toll house recipe. I use Sephra for my candy (peanut clusters), it's a little pricey but it's Christmas so I do a little extra. Thanks.

I ended up trying the Ghirardelli chips, but I used their recipe and got fried cookies. Either I overmixed the butter or the fact that it has 1/4 c less flour than the Nestle recipe did that. I think next time I'll cut back on time creaming the butter AND use the Nestle recipe, which has worked well for me (with their chips) in the past. Regardless of whose chips I decide to use.

I always beat my butter and the sugars together for longer than recommended, gets a little fluffier. I use a one inch scoop on parchment paper at 375 for 10 mins and they always turn out exactly the way I like them... soft on the inside and a little crisp on the outside. I creamed the butter and sugars for nearly five minutes at medium speed. I think that was a bit long. I use a #40 food disher, which might be a little large. I have a #60 as well which I might try. (I used to bake more than I do now, and because of that I have some specialized equipment that I got from restaurant suppliers to make the job easier.) Could also be that letting the butter soften was a mistake, but that's what G's recipe said to do. My aunt recommended replacing half the butter with vegetable shortening, which she claims produces a lighter cookie.

I use Ghirardelli chocolate chips with the usual Toll House recipe, but I do 1/2c white sugar and 1c brown sugar - it makes them softer.

I was not sure what the consequences of exchanging brown sugar, with its molasses, for white sugar might be. Seems like depending on what you want, they are manageable.

I had German cookies when I was away. And bread. Sigh. Sorry but the Germans may be the best bakers ever! Surpassing France even! The cookies seemed to have less sugar. I can't even explain the bread but so very good.

I can't even explain the bread but so very good. I sometimes look at a site called allrecipes.com, and frequently bakers and cooks in the comments on recipes note things they changed. It's fairly common, in cookie recipes, for bakers to remove some of the sugar. Rarely more than half (and usually less than a quarter), but they comment about it regularly.
