Trying this tonight.
Preheat to 400.
3T honey mustard
1tsp oregano
1tsp thyme
1/2 tsp garlic powder (or to taste)
1C ground pistachio nuts
Salt and pepper the filets. Mix the herbs, garlic powder and the ground pistachios to a corn meal level grind. Brush the honey mustard onto both sides of the filets. Press the coated filets into the crust mix. Baking pan at 400 for 15 minutes or so, depending on the thickness of the filets.
Serving with a spinach and mozzarella stuffed ravioli.

As written, this gets a 3.8, but has serious potential for 4.5+. Use Dijon mustard. The Mrs. likes that yellow "mustard", but that stuff is kind of weak for flavor. Once you get the coating mix done, toast the crumbs for a minute or three, before coating the fish. There is a lot of oil in pistachios and it caused a bit of clumping of the breading. A little toasting will help. That's about it. This one stays on the list.

How many and what size filets did you use with this amount of ingredients?
I count calories as part of my weight control strategy and would like to evaluate this.

The only problem with that is you need the honey mustard to help the pistachio "breading" stick to the filet.

This sounds delicious. I love pistachios and used to try to incorporate them in meals. Unfortunately pistachios are high in iron and I cannot eat them.

If you want more of a mustard hit, perhaps consider using mustard powder instead. The only problem with that is you need the honey mustard to help the pistachio "breading" stick to the filet. Why not use squeezy honey, and mustard powder?
