The man who developed the Carolina Reaper, a famously hot pepper at 1.6M Scoville Heat Units (SHU) has a new entry, Pepper X, at 2.5M SHU. For comparison, the ghost pepper is 1.0M SHU. I have eaten salsa made from ghost peppers and it is quite, quite hot.

I don't understand why people want to burn the inside of their mouths and bodies eating such hot peppers. I like hot sauce on certain foods, but not as hot as the Reaper or Pepper X would produce. Past a certain point there is no flavor, just discomfort. That point will vary; there are people who regard the jalapeno has too hot to eat. I regard it as rather mild. I guess the folks at the other end of that spectrum are the Pepper X customers. I do not expect to be one of them.

I don't understand why people want to burn the inside of their mouths and bodies eating such hot peppers. I agree. I actually like peppers but not the ones that make me sweat. I put a seeded and diced Fresno chile in the turkey chili I made over the weekend. Yep. Hot enough. And, for the first time I added a tiny bit of cinnamon. I was so surprised at the subtle difference it made. Very good.

Everyone has different tastes buds that's for sure. My two sisters and I were at a restaurant in New Mexico. My oldest sister complained that the food was too spicy hot and the middle sister complained that it wasn't spicy hot enough. I thought it was okay. It differently wasn't hot enough to make you sweat and bring tears to your eyes. When food is that hot, what can you taste but heat?

A guy I know was obsessed with growing seriously hot peppers for a while. He used ghost peppers and carolina reapers like they were normal condiments with food.
I like spicy food but not that hot.

I like the kind of spicy hot that kind of creeps up on the end of a chew of food and then smooths out. That may be why I love spiced chocolate candy.

I was so surprised at the subtle difference it made. Very good. I have added that to spaghetti sauce with good results. For my taste, it needs to be just a little, so the flavor is rather subtle. First time I guessed wrong and added too much, and did not like the result. (My sauces are very basic, ginned up from cans: tomato sauce, tomato paste, diced tomatoes, stuff like that.)
