Two relatively healthy salads that are super yummy and relatively easy to prepare. We're relatively light eaters so this is basically a dinner for us.
Spinach/strawberry/feta/chicken
Spinach/pear/walnut/goat cheese/chicken
In both cases I prepare the chicken the same way.
I get boneless chicken breasts and cut the meat into sections about 1 inch by 1 inch (not an exact science)
Heat up some olive oil in a pan, add butter (optional if you're worried about your arteries), lemon juice, pepper and other herbs to taste. Saute some diced onion. Add the chicken to the pretty hot pan and then some white wine because it is fun and makes you feel like a bada$$ in the kitchen.
Do all this to taste. The lemon can be pretty overpowering so maybe go conservative on your first attempt.
Salad 1
Spinach Fresh strawberries which I slice Sliced red onion Feta cheese Sliced soppressata or chorizo is optional (this adds a bit of a kick to it which I like) I use an Italian vinaigrette but oil and vinegar could also work.
Mix
add the sautéed chicken on top
Salad 2
Spinach Slice an Anjou Pear. Walnuts Cranberries Sliced soppressata, prosciutto, or chorizo is optional Goat cheese
Cut the goat cheese into slices and wait til it gets to room temperature. You then mix it with the other ingredients until it kind of coats everything.
Then add an Italian vinaigrette but oil and vinegar could also work.
Add the sautéed chicken on top

Yum! Salad #1 sounds great. I do something similar and I use a balsamic vinaigrette glaze.

Making Greek salads tonight with chicken.
Gonna grill the chicken on charcoal to give it some extra flavor.
Both those salads sound good and are similar to what my wife makes.

Hey, I made a Greek salad tonight to go with a pizza (store bought this time 🤭) and some air fried chips (fries). It never ceases to amaze me how a few simple ingredients become so quintessentially 'Greek' in essence.
1 green bell pepper, sliced 1 beefsteak tomato, diced 1 red onion sliced (I do this top to bottom) 5" of cucumber diced All mixed together 150 grams (6ozs) feta cheese crumbled on top A handful of black olives (Kalamata) A very good shake of oregano
Seasoned with Salt and pepper and EVOO.
Serves 2.

Greek cuisine is about quality ingredients (they just taste better over there), cooked and seasoned properly.
