I picked up a swordfish steak at the market. It's something I never tried before. Followed this recipe.Since I only had one steak, I cut down the ingredients but did not measure. I used dried parsley flakes instead of fresh parsley. Damn, it was good!

Swordfish is OK but I prefer salmon, tuna, seabass and halibut over it. In my experience, it dries out too quickly, and that's even at high-price restaurants.

Personally, I prefer fish of the cod or haddock variety - battered and deep fried, with chips.

Mo's Fisherman's Wharf on President & Pratt used to do a mean blackened rockfish platter. I used to carry-out one once a month after work. And it wasn't dry. Cooking fish just requires undivided attention because most varieties are delicate..

If you had used fresh parsley (or fresh cilantro, thyme, rosemary, or basil) you would have typed "Damn" in all caps) If you had typed 'coriander' instead of 'cilantro', I wouldn't have had to look it up.
