Gently rinse 15 sprouts, de-stem and halve the sprouts. Cut side down in a skillet. Drizzle 3 tablespoons of olive oil over the sprouts. Salt. Cover. Medium heat for 5-8 minutes. Check them twice to make sure they're not burning. Uncover and continue cooking for 3 minutes. Meanwhile, juice of half a lemon in a bowl. Take sprouts off and toss lightly in lemon juice. Sprinkle some shredded pecorino Romano over the top. Serve.

How do you get them to not be bitter? Because I don't like that aspect of them.

Another key is making sure that you get very fresh young sprouts (aka small ones). The more mature they get the more they tend to be bitter in my experience. My go to is H-mart. Hahhh just realized something, Brussel sprouts and people.... they mature the same way. 😂
