The cukes are coming in nicely in our garden this spring, and that means cucumber sandwiches!
We make the basic ones on rye bread, with a mixture of cream cheese and dry Italian seasoning spread first on the bread and the cukes on top of that. For more elaborate cuke sandwiches, we'll add lettuce, tomatoes, mashed avocados and a drizzle of EVOO. Sooo refreshing on a hot day, and they're even relatively healthy to eat.
I'm jonesing for one right now, and I just finished breakfast...

In the summer, when zuccini's are being given away, I make zuccini bread, it's basically a soda bread, and very tasty. Now you have me wondering if I can substitute cucumbers for the zuccini, I don't see why not ... I'll give it a go and get back to you.

Apparently cucumber bread is a thing so it appears so. www.allrecipes.com/recipe/228216/cucumber-nut-bread/ That sounds interesting, although it strikes me as more of a cake than a bread. This is the courgette and cheddar soad bread recipe that I use, except that I make my own buttermilk (substitute).

I think I'll buy a package of cocktail bread today and use it for my cucumber sandwiches. I might add some sprouts. Not the rest though. I eat enough salads. That is a good suggestion. I need to try that addition myself...

We even eat zuccini ice cream at the annual Windsor (Florida) Zuke Fest, which sadly was cancelled this year because of covid concerns.
Many (MANY) years ago, the first date I ever took Mrs. G on was to the Windsor Zuccini Festival. I was a member of the KazooCini Marching Band back then - a group of ill-reputes who marched around the festival grounds playing patriotic muse on kazoos. (Still have mine). Kept going back to the car to refill gin and tonics for her on breaks. Can't remember if it paid off for me that particular day, but it eventually did ....

Now you've got me thinking about summer foods with cucumber that I love. Minty watermelon cucumber salad, cucumber salsa and tomato and cucumber salad! Come on garden veggies!! We had cuke sandwiches (but NOT with mayo!) and a watermelon side last night for dinner, and it was so cool and refreshing after a hot, muggy Florida day. Very curious about the ingredients of the salad highlighted above - spill it, kid... Very refreshing.... 8 cups cubed seedless watermelon 2 English cucumbers halved lengthwise and sliced 6 green onions chopped (sometimes I don't add this, depends who I am making it for) 1/4 cup minced fresh mint - chopped (lemon or orange flavored mint is really good too) 1/4 cup balsamic vinegar 1/4 cup olive oil 1/2 teaspoon salt 1/2 teaspoon pepper Mix it all and let it rest in the fridge for about 30 minutes. Easy to cut this recipe in half, I don't really like this left over. Sometimes I will add a little feta too, it's a nice addition. If you try it, I hope you enjoy it!!

A few times a week during the summer I make a watermelon, feta, and reduced balsamic vinegar salad. It's addictive but only if the melon is good and feta good feta - not crumbles. Please no crumbles. A feta that doesn't crumble, is there such a thing?

Cucumber boats are good too. Cut them lengthwise, scoop out the seeds and fill with tuna or chix salad. No bread needed.

A feta that doesn't crumble, is there such a thing? There are packages of already crumbled Feta. I don't like the taste. It's dry. imo. I like to buy the brick and chunk it myself. Me too. There is a place in town here called the 'Taj Mahal' that specialises in asian and mediterranean foods, and they still cut feta straight from the wooden vats in brine, as I first saw in Greece many years ago. Cuts of that cheese were certainly firmer than anything pre-packaged from a supermarket, but could still be crumbled when needed. Other vats there were stocked with various olives etc. I always look forward to my visits to that store.

I was showing Cowboyz' recipe to Mrs. G yesterday, and when she spotted my question about green onions, she said that Cowboyz meant scallions and that I was a dummy for not knowing that.( Mrs. G is from Pittsburgh and so I had to substitute the word "dummy" for the word she actually used).
At any rate, we're going to try the salad early next week when the weather here improves and we can get back to hanging out by the pool. Thanks again to all who played along...

Here's another summer salad I love with lots of cucumbers....
Tomato and Cucumber Salad
Tomatoes - cubed Cucumbers - cubed Red onion - diced small, small amount Olives - Kalamata - chopped, no pits of course Lemon - squeeze fresh lemon over the top Feta - crumbled on top
I love this salad, no dressing and the lemon adds just enough flavor. Use whatever amount of each ingredient you prefer. I go heavy on the cucumbers.
