Potatoes make French Fries, chips and vodka. It's like the other vegetables aren't even trying. We were trying to think of a type of potato dish that each of us doesn't like. I could only come up with scalloped and tater tots. My friend came up with anything with sweet potatoes. That's just weird. Other than those two, potatoes are my perfect food. Unfortunately. Last night, as the oven was going to be on, I made my 'Greek roast potatoes', to go with Chicken Kievs and a stir-fry of cabbage, carrot, mushroom and onion. Weird I know, but remarkably tasty combo.

At least in my experience when it comes to scalloped potatoes and tater tots. I can really like either of them or hate either of them. Much depends on what you start with or how you cook them or a combination of both. When it comes to scalloped I absolutely hate most all (but not all) pre-boxed kits. Almost always come out like someone took kettle potato chips....burnt the edges and then smothered them in some non-descript white Sause. Some microwaveable lately are pretty good. But my wifes scratch recipe is the best and I love it. Same sort of thing with tater tots...... depending on brand some aren't half bad at all if you air fry them..... others seem like the could decide if they wanted to be a potato (in taste or texture) OR they want to be those 1960 fish sticks that were gray and mushy.....you may remember that they seemed to want to be oatmeal .... remember? Anybody remember the Green Giant 'Boil in bag' frozen Brussel sprouts. Second worst 'prepared' vegetable I ever ate...... second only to those tall cans of Asparagus .....EEEEEEYYYYukkkk! It was the only veg. that made me gag.....but the added benefit I could floss almost immediately they were so stringy. 😄

That's just weird. Scalloped don't do much for me, or "au gratin" which a relative used to call "all rotten". I like the flavor of sweet potatoes but not the soft mushy texture. Of course, I only eat them once or twice a year and it could be the way that cook prepares them. Potatoes are a thing I don't enjoy as much as I once did, in any form, because when I was losing weight I had to balance calories vs. nutrition and the potato is low on the list of vegetables. And there are other starches, like rice, that I prefer.

I have been taking my frozen Brussels sprouts, microwaving for maybe three minutes, draining and letting them dry, and then roasting them in my air fryer. They are so good. Sometimes I drizzle a balsamic reduction on them. I could eat the entire bag. Who am I kidding? I have eaten the whole bag in one sitting. But nothing else! Brussel sprouts? Ick! /MunchesOnAirFriedTaterTots

I remember going on a Bike Virginia ride one year and one of the lunch stops consisted of this vegetarian gruel that was essentially brussel spouts in some sort of vinegar sauce and baked beans. It was horrible. So about five miles out of the lunch stop was a little mom and pop store who happened to have a pizza oven. The place got swarmed. We literally cleaned it out.

I have converted many a Brussels sprouts hater! Canned vegetables are weird. I like canned green beans much more than frozen and nearly as much as fresh. Other than that, think we've gotten spoiled with the nearly year round availability of fresh. Exceptions--beets are ok, and I do like artichoke hearts (the ones in marinade) and hearts of palm in salads.

I am trying to get myself to like pea soup - because of the mushiness. lol I puree mine (immersion blender, best investment!) and add a little chicken stock if too "mushy". Kinda agnotic when it comes to mushiness....but kids were not fans!

I don't have any problem with any of the food mentioned here (except the rare steak, the french fries and the canned asparagus). Mrs G has even eased me on over into beet territory. I just wish I could figure out how to use her air fryer more effectively...

I love Brussel sprouts. Roasting them in chicken stock and bacon is the way to go. Balsamic, too, if that’s your thing.
Love mushrooms. Any kind. Raw or cooked. Love them cooked with red wine and paired with steak.
And if you’re in the mood for potatoes but don’t want all the carbs turnips or rudabega (sp) is a great substitute. Just cut it up into cubes and sprinkle with salt, pepper and evoo and roast until golden brown.
