Mrs G made this - primarily from items in our garden - with a vinegar/water/sugar mix that she marinated the veggies in and refrigerated. My God I loved it! And so simple to prepare.
Slice equal parts of cuke, tomatoes, onions (and in our case, also banana peppers) into a bowl.
Mix equal portions of vinegar and water together - enough to cover the veggies. Then mix in a couple teaspoons of sugar.
Mrs G says you want the marinate to have a sweet and sour taste to it - she kept adding small amounts of sugar to the marinate, mixing it around with her finger and then shoving said finger in my mouth to see what I thought of the taste before she seemed satisfied.
So bring the marinate up to taste (with or without your finger), pour over the veggies (and the tomatoes, which are actually a fruit) and slip into the frig for an hour or so. Wonderfully refreshing side dish...
