I bake it. Use thick asparagus. Poke A few holes in each stalk and lightly salt them. Let them sit for 30 minutes. Run them into a "wash" of whipped egg whites, Roll them in Panko crumbs and fresh grated parmesan. Bake 'em on a cookie sheet for 5 or 6 minutes at 400. Will try Asiago to next time. Now THIS I'm going to try.
I do snap off the ends of the stalk, and I've tried shaving down the lower third of the remaining stalk if it's still thick, but I've never tried poking holes in the stalk OR washing the stalk in egg whites. I will now however. Thanks. And welcome...
One hint. Work fast from wash to bread crumb mix, as it can make the mix clump up on you. And yes, cut off the lower 3rd. Enjoy!

Trying a new one tonite...
EVO, crushed garlic, salt and pepper to taste. 400 for 11 minutes or so. Lemon zest and juice when is comes out.
